Butterscotch Sauce

I love caramel and butterscotch. What’s the difference? Caramel is made with granulated sugar while butterscotch is made with brown sugar. Who needs to be that technical though? Why not just enjoy them, whatever you decide to call them?!?!

To make my butterscotch sauce, I melted butter and then added brown sugar, cream and white corn syrup. Stir until it comes to a boil and then cool. Any unused sauce can be stored in tightly-sealed jars in the refrigerator.

Ingredients

1/3 cup (80 mL) butter
1 cup (250 mL) lightly packed brown sugar
2/3 cup (160 mL) 35% cream
2 tbsp (30 mL) corn syrup

Preparation

 Start by melting butter in a saucepan and then toss in brown sugar, cream and corn syrup.

Stir constantly over low heat until mixture comes to a full boil.
